These steaks are cut from the shank of the Texas Longhorn; we like to braise them in a cast iron pan with a seasoning of Ancho Chili Barbacoa and then cook them low and slow for fall-off-the-bone tenderness and flavor. These steaks are chef favorites and one of ours too. Ask about our winter ragu recipe.
